In the 1920s Hulda Ottestad made a bold move for a Norwegian woman, buying Café Alliance in Harstad, and from a Danish recipe she created the Kvæfjord Cake, a sponge with meringue and almonds, filled with custard and whipped cream, which a 2002 radio poll crowned the world's best cake. Amager Bryghus and Bådin Bryggeri of Bodø turn it into a beer: World's Best is an Imperial Pastry Stout at 11% ABV and 20 IBU, dark and enveloping, with a dense, velvety body where almond, custard, cream and caramelized meringue melt into an indulgent sweetness, gently steadied by a discreet bitterness. A sweet friendship in liquid form.
