Where to start when you want to talk about Chimay Bleue? Chimay Bleue is the complex of Trappist beers from the Abbey of Notre Dame de Scourmontee and is well suited to long aging in the cellar to test its evolution over the years. in the 75 Cl format it is also called Grand Reserve, and is also used as a base for various barrel passages of different spirits. The nose is catered by notes of spices, licorice, cocoa, dried fruit and red fruit. In the mouth it is warm and enveloping, almost liqueur-like at times. Obviously if you keep a few bottles for a longer period you will observe both in your mouth and nose the explosion of oxidative notes reminiscent of Port and Marsala.
