Description
The young woman matures a couple of months in oak barrels and therefore has a soft-bitter tannin. The taste is full and complex due to the controlled acidification that leads to the maturation process.
Mam'zelle is originally a blonde beer. The ripening process gave her a soft red glow. So she's called blonde redhead. The alcohol percentage is 8.5%. The brewers declare it "indomitable".
