Description
Angel Dust is a grape must saison from Birrificio Eastside, born from the idea of bridging beer and wine through Ottonese grapes, a native variety given from Progetto Sete in Priverno, whose must makes up 10% of the recipe and lends the beer an antique gold, hazy color along with notes of white fruit and flowers, balanced by a lively acidity and a pleasant saline character. The grain bill keeps things simple with Pils malt and a touch of wheat, while Herkules hops serve only to balance the natural sweetness of the must without overpowering it. The true protagonist of this recipe is the yeast, a 50/50 blend of Belgian and French saison strains fermented across a range of temperatures, from 24 to 30 degrees, to draw out the full aromatic complexity these strains are known for. The name Angel Dust comes from the beer's hazy golden hue, reminiscent of the gilded angels, putti and cherubs adorning baroque churches. On the nose, peppery spice, wildflowers and a subtle vinous, tangy edge come through, while the palate confirms a rustic, bone dry character with remarkable drinkability despite its complexity. A beer built to evolve over time, best enjoyed alongside blue cheeses or a spiced Thai shrimp dish.
