Description
Old Pants, New Soul by Mogwaï Beer Company is a Pils single-hopped with HBC638, built around a deliberately clean approach with one distinctly modern twist: the style is classic—almost ancestral—while the key hop is an experimental American variety from Yakima, chosen to add a contemporary edge without hijacking the profile. It’s easy to assume “simple” means “boring,” but here simplicity is the point: no gimmicks, no flashy add-ons, and a recipe that stands on precision and restraint. Hopping stays modest, just under 3 g/L, and there’s no dry hop, a coherent decision if the goal is to keep it crisp and true to style rather than turning it into a pils-IPA hybrid. In the glass it follows the Pils blueprint the right way: super clean and super crisp, dry, snappy, and highly drinkable, with a proper touch of bitterness that finishes the sip and makes you reach for another. Aromatics stay elegant, leaning herbal and subtly floral in a way that fits the style, with HBC638 acting more like a modern refinement than a shouty centerpiece. If you’re expecting a hype-forward, loudly aromatic pils, this will feel intentionally restrained; if what you want is a precise, crunchy, no-nonsense lager, it’s exactly in that lane.
