Description
Separatist Foudre Tropic
Farmhouse matured in a single large oak foudre with the house "wild" blend and a free dryhopping of whole surrannè hop cones. After 4 months of maturation, pink guava puree is added for a further 2 month maturation. Finally, a further maturation in the bottle takes place for 3 months. Notes of guava, citrus, hay, field, spices, yellow fruit and a delicate funky nuance of wood, cellar and salami skin. Dry, rustic on the palate, very attenuated with the sweetness of pink guava which tempers a very free-range lactic acidity.
