Pierre Tilquin does not brew lambic. He selects, blends, and transforms it — with the precision of a watchmaker and the vision of an artist. His Gueuzerie in Rebecq has become, in just a few years, a worldwide reference point for those who seek lambic in its most authentic and ambitious form. Oude Airelle Sauvage is one of his rarest and most sought-after expressions. The starring fruit is the airelle sauvage — the wild lingonberry — a northern European berry with a forceful personality: sharp acidity, light tannins, and a bitter edge that sets it well apart from softer, more yielding fruits. Not a fruit that is easily tamed. Perfect, then, for lambic. 125 grams per liter: a generous quantity that leaves no doubt about the intent. The berries are not an aromatic accent — they are a pillar. The spontaneous fermentation of the base lambic, already wild and complex, meets the Nordic character of the lingonberry in a dialogue between acidities that overlap and shape each other over time. The 2021-2022 vintage carries the voice of two different seasons, blended with the rigor that distinguishes every release from Tilquin. Unfiltered, unpasteurized, refermented in the bottle: no mediation between the beer and the drinker. Just lambic in its most alive and honest form, à l'ancienne — as it was once made, as it should always be made. A rarity to be uncorked with reverence. And patience.
