Description
There is a hop that doesn't tiptoe into the room, and frankly no one here asked it to. Simcoe. Direct, resinous, with that look on its face that says "I know exactly what I'm doing." Everything starts with it, and every single decision in this beer revolves around it. The hops were sourced in America, where they belonged: T90 and Cryo selected batch by batch, sniffed in person, because trusting is fine but checking for yourself is better. Completing the picture is DynaBoost Simcoe, added not for show but to push the flavour exactly where it needs to go; cleaner, deeper, more precise. On the nose it opens with resin, pine needles and lemon zest, then comes that darker, more surprising layer of blueberry and red berry fruit, just to remind you that Simcoe is never just one thing and never will be. On the palate the bitterness is sharp, clean and precise, no smudging, no compromise. The body is upright, the balance surgical, the finish dry and unapologetic. A beer that is not looking for general consensus; it draws a line and waits for you to cross it. The kind you tell yourself you'll drink slowly, while the glass has already made up its own mind.
