A white wine of character, born from the skilful meeting of artisan tradition and enological precision. The harvest is strictly hand-picked. The selected grapes rest in a cold room for twelve hours at 10°C, preserving the aromas and freshness of the fruit intact before any processing begins. The wine is the result of a blend conceived in the vineyard itself: approximately 30% of the ripest grapes ferment in terracotta amphorae, in contact with the skins and without temperature control, following the natural rhythm of fermentation. This is where the soul of the wine is born — a dense, enveloping tannin-savoury structure with a depth and substance rarely found in a white wine. The remaining portion, selected from the bunches richest in acidity, is destemmed and gently pressed while still cold. The free-run juice obtained ferments in stainless steel tanks, then aged on its own fine lees after a single racking — a process that brings freshness, tension and a lifted quality to the palate. The two wines come together in the spring following the harvest, when the final blend finds its balance: the structure and complexity of the amphora meets the vibrant acidity and energy of the steel. The result is a white wine with a dual soul — textured and taut, deep and fresh — crafted for those who seek a story to discover, glass after glass.
