Description
Danielli Il Santissimo Passito is a sweet meditation wine made from Trebbiano, Malvasia, and Verdello grapes sourced from the estate’s oldest vineyards, ranging from 45 to 55 years of age. The vineyards are located at an average altitude of 350 meters above sea level on clay-rich soils that provide structure, depth, and balance to the wine. Harvesting involves a careful on-vine selection of the bunches best suited for the drying process, allowing the grapes to develop greater concentration, richness, and aromatic complexity. After harvest, the grape clusters are naturally dried for at least two months. The must obtained from pressing undergoes a slow fermentation in partially filled traditional chestnut wood barrels known as “caratelli,” a method that gives the wine an intense and refined aromatic profile with notes of candied fruit, honey, sweet spices, and elegant oxidative nuances typical of handcrafted passito wines. Rich, persistent, and refined, it is perfect as a meditation wine or paired with blue cheeses and dry pastries.
