Domaine Cady Cheninsolite 2021 From pure Chenin grapes, the harvest is manual and takes place in the month of October in order to collect well-pigmented golden grapes, a guarantee of excellent maturity. Fermentation and vinification take place in oak barrels and continue with refinement on the fine lees for 11 months. It is bottled in the September following the harvest. Golden to the eye, the nose is complex and fresh with honeyed notes. The ripe berries give a beautiful structure. In the mouth it offers a creamy sensation that mixes with the fruity aromas and typical flavors of Chenin, sublimated by the wood. A fresh wine, with good acidity, which offers a slightly spicy finish.
