From pure Passerina grapes, grown in Zagarolo on medium-textured clayey, tufaceous soil with marine sediments, at an altitude of 280/300 m above sea level. harvested manually at full ripeness. A white wine obtained through crushing, destemming, fermentation with indigenous yeasts and aging in steel with its own fine lees for 6 months with periodic pumping over. Straw yellow in colour, dry and with good structure in the mouth, good acidity and persistence on mineral notes. To be paired with white meats, fish-based dishes both cooked and raw, risottos and light first courses.
