Description
Grape varieties: Chardonnay 50%, Macabeo-Xarello 50%
Alcohol content: 12% Vol.
Comments: Seleccion Raventos, the ancient private selection of the Raventos family. A cava that is a combination of the famous Chardonnay with the traditional varieties of Macabeo and Xarello. Modernity and tradition in a special Cava. Spend at least a year in silent underground cellars. The grapes used for this Cava come from two very different wine-growing regions. Quality is the key selection criterion. Chardonnay comes from the Costers del Segre DO cava region with a more continental climate, where the grapes show great concentration of fruit, more body and a greater intensity of aromas. The grapes are harvested around mid-August and always at night, in order to preserve the fragrance of the grapes and prevent its oxidation. The remaining grapes come from vineyards rigorously selected by our winemakers in the Penedes region, where these varietal grapes have their typicality, thanks to the sweet Mediterranean climate which favors their early ripening, freshness and floral aromas. In this case the harvest takes place from the end of August to mid-September. It is a Cava Brut, with a brilliant straw yellow color and a fine and persistent perlage. The nose shows intense aromas of pineapple, citrus fruits and apples. There are also reminiscences of dried fruit, honey and toasted bread, due to contact with the sediments. Full-bodied on the palate, with a fresh and persistent finish.
