There is a cherry that the lambic world venerates like a relic. It is called Schaerbeek — named after the municipality on the outskirts of Brussels where it once grew in abundance — and it is the original cherry, the one with which traditional Kriek was born centuries ago. Small, tart, intensely flavored, and now nearly extinct. Finding it today requires dedication. Using it in this quantity requires courage. 320 grams per liter. This is not a detail — it is a statement of intent. Tilquin does not add Schaerbeek cherries to the beer: he builds the beer around them. A quantity that very few producers in the world dare to reach, one that transforms the lambic into something extraordinary: dense with fruit, rich in color, loaded with the sharp acidity and wild tannins that only the Griotte de Schaerbeek can provide. The spontaneous fermentation of the base lambic merges with the character of the cherries over months of slow, deep contact. Unfiltered, unpasteurized, refermented in the bottle — every stage of the process is designed to preserve the life of the beer, its evolution, its radical honesty. À l'ancienne: in absolute respect for a tradition that needs no improvement, only protection. The result is Kriek in its purest and rarest form. Not a tribute to tradition — tradition itself, in a bottle.
