This is not excess for its own sake: it is the recognition that the Reinette Étoilée deserves every gram of space it can occupy. The Reinette Étoilée is an ancient, local Belgian apple, far removed from commercial circuits — one of those varieties that existed before agricultural standardisation decided which fruits were worth preserving and which were not. Rustic, aromatic, with a lively natural acidity and a complexity that modern apples can only aspire to. Pierre Tilquin treats it the way one treats a rarity: with care and without compromise. The base is a blend of 1, 2, and 3-year-old lambics: three generations of spontaneous fermentation merging into a single body, the depth of the old and the vivacity of the young balancing each other with quiet precision. On this already complex foundation, the apples ferment slowly, releasing pulp, juice, aroma, and that tannic note that only heritage fruit can provide. The result is a beer of extraordinary layering: the fruit is not an addition — it is inside the beer, woven into its very DNA.
