Rhubarb is not a fruit. It is something harder to define — and perhaps that is precisely why it understands lambic so well. Pierre Tilquin chooses his ingredients the way a botanist chooses rare herbs: with knowledge, with intention, and with respect for what each plant has to give. Rhubarb brings a personality unlike anything else in the world of brewing ingredients: tart by nature, earthy, with that almost medicinal and wild note that the palate recognises immediately and never forgets. It does not soften the beer — it challenges it. And lambic accepts the challenge without hesitation. 250 grams per liter: a commanding presence, designed to make rhubarb felt at every stage of the sip, from the first aromatic impression to the last lingering aftertaste. Spontaneous fermentation works on the pulp and juices of the plant for weeks, extracting complexity layer by layer, until the two souls — the wild one of the lambic and the austere one of the rhubarb — find their equilibrium. Unfiltered, unpasteurized, refermented in the bottle: alive, evolving, impossible to replicate. À l'ancienne, as always at Tilquin — not out of nostalgia, but because certain methods produce results that no modernisation could improve upon. A lambic that speaks the language of the garden and the cellar at the same time. Wild, sour, and wonderfully strange.
