A.O.C.: Sauternes
Variety of grapes: 91% Semillon, 6% Sauvignon Blanc, 3% Muscadelle.
Alcohol content: 13% vol.
Vinification: the grapes are harvested by hand, then they are slowly and lightly pressed. The fermentation process is stopped before completion, so that not all of the sugar turns into alcohol, giving the wine a high residual sugar content and the unique taste of a great sweet wine.
Maturation: This Sauternes is produced in limited quantities and aged in the cellar, where it is treated with meticulous care in order to preserve its splendid aromas and distinctive
characteristics.
Comments: with a bright golden yellow color. On the nose it exhibits aromas of plum jam, quince and, subsequently, reminiscences of peaches and apricots are noted, together with refreshing notes of honeysuckle. In the mouth it is complex and seductive, very rich in fruity aromas: in addition to those already present on the nose, there are hints of tropical fruit, such as pineapple and mango. Its sweetness is seductive and culminates in a fresh and mineral finish.
Serving suggestions: excellent with foie gras, citrus tart, blue cheese.
Serving temperature: 10-11 °C.
