Tasting notes: On the nose it shows an intense and complex aroma that reveals the passage of time, in which a predominance of spicy notes stands out (licorice, curry, chocolate) together with reminiscences of blackberry and plum jam, accompanied by notes of chamomile, tea, toasted dried fruit and nuts. Initially very sweet on the palate, it then gives way to a fresh and intense sensation, finally ending in a long and refined finish.
Pairings: Perfect as an aperitif or combined with blue and creamy cheeses. Also excellent with elaborate duck-based dishes.
Truly delicious as an accompaniment to chocolate desserts or pears in wine.
Winemaker's comments: The wine is a tribute to the monks of the valiant Carthusian order, who arrived in what is now the Priorat in 1095 and began cultivating vines. In 1835, a violent riot destroyed his life's work and the mob sacked the Carthusian monastery.
Soil characteristics: The central Priorat has a soil known as "llicorella", which is unique in the area. It is made up of dark slate layered with quartzite. The soil is poor and of volcanic origin, which gives the wine a strongly mineral character.
