SPUMANTE Codorníu Ars Collecta Brut Blanc de Blancs 75 Cl. (Metodo Classico)

Codorníu Ars Collecta Brut Blanc de Blancs is a classic method Spanish Cava in the 75 cl format at 11.5% alcoholic strength, produced with Chardonnay, Xarel.lo and Parellada grapes selected from vineyards in distinct climatic zones: Chardonnay from Costers del Segre with a continental climate for freshness and evolutionary potential, high altitudes in Pla de Manlleu, both with a Mediterranean climate. Made with night harvesting at the beginning of August, delicate pressing in pneumatic presses and fermentation in small batches at 17°C, with a portion of must in French oak foudres, this Cava ages for at least 15-18 months on the yeasts in the constant temperature cellars of Codorníu, an 18-generation historic cellar declared a national monument. It is clear and brilliant, with a warm yellow color and golden reflections, fine bubbles in a persistent rosary. Notes of toasted bread and brioche emerge on the nose, intertwined with white pulp fruit such as peaches and nectarines, on a background of dried fruit and nuts, with complexity that expands over time. In the mouth it is ample, balanced, creamy and unctuous, with high acidity which guarantees longevity and versatility. It goes well with seafood, raw fish such as sashimi, smoked meats, rice dishes or structured appetizers, maintaining balance in horeca contexts or domestic consumption.
