Born of a blend of lambics of different ages and refermented in bottle, as tradition demands, the beer develops a fine, persistent effervescence that lifts a complex profile: bright, refreshing acidity, notes of lemon, green apple and stone fruit, rustic hints of hay, leather and cellar, and an elegant dryness that invites the next sip. Refermentation smooths the edges of the lambic without dimming its spontaneity, and the result is a beer both austere and joyful, closer to a rustic champagne than a thirst quencher.
