The Mariage Parfait differs from the other Boon Geuze in the way in which the blend is assembled: 5% of freshly brewed new lambic is combined with 95% of a specially selected special lambic matured for 3 years. On the nose notes of apple cider vinegar, unripe apple, leather, wood. In the mouth it is very dry and funky, with a clear but clean acidity.
