Eastside’s Santa Rosalia is the stop that closes the imagined journey through southern Italy, after Naples and Lecce, arriving in Palermo with an Imperial Stout that pays tribute to the Sicilian cannolo. To evoke the softness of sheep’s milk ricotta the brewery chose lactose, joined by the candied citron and orange peel that traditionally adorn the ends of the cannolo. With a cannolo to carry along on a journey in mind, chocolate was added as well, an element foreign to tradition but used inside the shell to keep it from softening too much when the pastry is not eaten right away. The result is a baroque, opulent and sumptuous beer, just like Palermitan baroque, one of the richest artistic and architectural expressions in Europe between the seventeenth and eighteenth centuries, made of urban stagecraft, polychrome marbles, elaborate stuccoes and exuberant decoration. The label features Palermo Cathedral, a UNESCO World Heritage site and a symbol of the many cultures that have crossed Sicily over the centuries, which holds the remains of the Santuzza, the affectionate name Palermitans give the Saint, whose veneration extends beyond the city limits to embrace the faith of the whole island.
