Description
Zanotto Col Fondo is an unfiltered sparkling white wine crafted using the ancient method of in-bottle refermentation, known as "Col Fondo" or "sur lies", made from carefully selected Glera grapes grown in hillside vineyards at an altitude of 370 metres above sea level. The refermentation takes place in the bottle during the Easter spring period, following the waxing moon cycle to enhance the wine's natural vibrancy, reaching its full expression after 60 to 90 days from bottling. In the glass it displays a bright straw yellow colour with greenish reflections, opening on an aromatic bouquet of bread crust, fresh apple and delicate citrus notes. On the palate it is dry, complex and elegant, with a pleasant mineral salinity on the finish that reflects the hillside terroir of origin. This authentic, artisanal wine can be enjoyed clear by allowing the lees to settle at the bottom of the bottle, or cloudy by gently swirling it for a more intense and structured flavour profile. Serve at a temperature of 8-10°C to fully appreciate its freshness and aromatic complexity.
