Description
Pretty Stable Chaos by Mogwaï Beer Company is a Brown IPA hopped with Sabro and Talus, a release that deliberately swims against the current—because, much like Red IPA, Brown IPA isn’t the easiest style to sell, which also makes it harder to find. The underlying assumption is compelling: if the mainstream overlooks certain categories, brewing them can be a statement of identity rather than a chase for trends. A smart counterpoint is that rarity doesn’t automatically equal excellence—Brown IPA can turn muddled if roast overwhelms hops, or if hops flatten the malt character. The whole game is balance between dark malt indulgence and IPA bite, and Mogwaï lean into their house approach with structure and a clearly asserted bitterness. The recipe starts on a foundation of caramelized and chocolate malts, building depth and a darker, rounder core, then pushes a deliberately gourmand aromatic layer through Sabro and Talus, each contributing coconut-like notes that slot neatly into caramel and cocoa tones. Keeping it on track is a bitterness that “earns the IPA name”: the bitterness is confident, adding a resinous counterpoint that makes the sip more dynamic and less sweet, steering clear of a dessert-like finish. The result is a Brown IPA with a very clear purpose—adding another style to the brewery’s “Pokédex”—but doing it in a way that actually makes sense: showing that overlooked styles can be seriously fun when they’ve got structure, recognizable hops, and a finish that still feels unmistakably IPA.
