Amontillado Napoleon
Description:
Dry, with a deep amber color, it is a well-aged sherry, with intense aromas of dried fruit, harmonious and a long finish on the palate. It can be tasted alone or paired with cured meats and cured cheeses, soups.
Winification:
vinified using traditional methods, Amontillado Napoleon is produced with "Palomino" grapes, grown on the "Albariza" limestone soil in order to obtain maximum quality. The grapes come exclusively from our Miraflores and Balbaina vineyards, considered the best in the Superior Jerez area. The harvest takes place as soon as the grapes reach the right ripeness at the beginning of September, the must is then fermented in temperature-controlled tanks. The wine thus obtained is then fortified to prepare it for aging in oak barrels.
Aging:
we use the traditional Criaderas y Soleras method in American oak barrels. Sherry matures under a protective veil of yeasts called "la flor", which protect it from the air and give it a particular aroma. With further aging all the yeasts die, and an oxidative process occurs which gives rise to the dry fruit reminiscences typical of Amontillado.
Bottling:
bottled exclusively by Bodegas Hidalgo – La Gitana, it was called Napoleon in memory of the French occupation of Spain at the beginning of the 19th century.
